Do you need ideas for a sweet and easy-to-prepare lunch that prepared a day before will be perfect as a snack at work, school or a walk? Thanks to berries, we can prepare not only a nutritious meal, but also a quick snack of low calorie content that will be the source of ingredients valuable to our bodies. And what is important – we can take it with us and eat almost everywhere.

Pancakes with fruity cottage cheese

  • 2 glasses of flour;
  • 2 glasses of milk;
  • 1 glass of sparkling water;
  • 2 eggs;
  • 2 spoons of oil;
  • 3 spoons of sugar;
  • 1 tea spoon of baking soda;
  • pinch of salt.


  • 500 g of cottage cheese;
  • 1/2 glass of highbush blueberries;
  • 1/2 glass of raspberries;
  • 1/2 glass of currants;
  • several strawberries;
  • 3 spoons of sugar;
  • 1 vanilla sugar;
  • 50 ml of double cream.

Mix all batter ingredients in a bowl, and fry thin pancakes. Then, whip a cream with vanilla sugar and regular sugar and add cottage cheese. Add washed and dried fruits to the cheese filling. Cut strawberries into smaller pieces. For better effect, you can divide cheese filling into two parts. Add blueberries and strawberries into the first one, and raspberries and currants into the second part. Fill pancakes and serve with sweetened cream and melted chocolate or plain.

Blueberry muffins

(for approx. 12 muffins)

•          220 g of wheat flour;

•             2 tea spoons of baking powder;

•             2 large eggs;

•             50 g of butter;

•             175 ml of milk;

•             4 spoons of sugar;

•             2 glasses of berries;

•             1 tea spoon of grated orange peel.


Melt the butter in a pan and leave for cooling. Mix flour with baking powder and sugar in a bowl. In a second bowl, gently whip eggs, add melted butter, milk and mix all together. Add wet ingredients into dry ones, than add fruits and orange peel. Mix everything with a wooden spoon until ingredients come together.

Place muffin cases in a baking form. With a spoon, put the dough up to 3/4 of the muffin case. Bake for approx. 20 - 25 minutes in the temperature of 180 degrees.
